When you place an object, like a key, you can see its properties (you can also inspect its properties at a later time by holding Ctrl and clicking on the object).
If you assign a name in the Pickup trigger field, then that trigger will activate when the player grabs the object.
As that trigger activates, you can use it, for example, to open a door by using the same trigger name in the door's properties and setting the door's trigger behaviour to Open.

Of course, this is a very basic example but it will give you an idea of how triggers work.

Try in sandbox mode first, and just play around with the trigger tags. For example give a key the trigger "a" and give the same trigger "a" to gates with setting "OPEN", with "SET" and with "CLOSE" to see the difference. Same with logs etc.

Other things that can trigger are for example flowers, the death of enemies or the breaking of barrels.
Other things that can be activated by such triggers are for example spikes.
